BOHRI STYLE WHITE MUTTON Ingredients 750 grams mutton, cut into 2 inch pieces on the bone 1 tbsp green chilli-ginger-garlic paste Salt to taste ¼ cup almonds, blanched and peeled ¼ cup pistachios, blanched and peeled ¼ cup blanched cashew nuts 2 tbsps soaked chironji 2 tsps soaked poppy seeds (khuskhus) ½ cup milk 3 tbsps oil 8-10 black peppercorns 3-4 cloves 2 inch cinnamon stick, broken 1 cup whisked yogurt Tempering 3 tsps ghee 1 tsp cumin seeds 8-10 curry leaves 2-3 dried red chillies Method 1. Meanwhile, to make the paste, put almonds, pistachios, cashew nuts, chironji and soaked poppy seeds and milk and blend to a smooth paste. 2. Put mutton in a pressure cooker, add green chilli-ginger-garlic paste, salt and 1½ cups water, mix and cover with a lid. Cook till 5-6 whistles are given out. 3. Heat oil in a deep pan, add black peppercorns, cloves and cinnamon stick and sauté till fragrant. 4. Add the mutton and mix and sauté for 2-3 minutes. Add blended paste and mix well. 5. Add 2 cups water, mix and add salt and stir. Bring the mixture to a boil. 6. Add yogurt, mix and cover and cook for 10-15 minutes on low heat. Take the pan off the heat. 7. To make the tempering, heat ghee in a small pan. Add cumin seeds and let them change colour. Add curry leaves and dried red chillies and pour the tempering over the mutton mixture. 8. Transfer this mutton mixture into serving bowl and serve hot.
